Halim
Black and white, 2 x 3 format
Halim (pron.: Aleem) is the Mauritian version of the traditional "Haleem", a stew that is very popular in the Middle East and the whole Indian subcontinent. In Mauritius it is made of wheat, lamb meat and a wide variety of spices that may include cassia, curcuma, fennel, and others. It is slow cooked for 5-7 hours and then beaten to a creamy consistency that blends all the flavours.
Just like some other slow cooked stews, Halim has a very special effect that is hardly explainable: When eaten at late evening or even after a long night out, it just makes you feel kind of well-adjusted and sleep well ;)
